Leafy Green Buns: Make a Lettuce Bun


As someone who eats a plant-based diet and has colitis, I try to eliminate bread and pasta from my life as much as I can.  Of course, when the mood strikes, I try to go gluten-free, but still, there's nothing like a lettuce bun to make things taste even better!

Leafy green buns, as I like to call them, are lettuce buns that you can use for taco boats, veggie burgers, and sandwiches.  My favorite leafy bun is butter lettuce, hands down!

When using a lettuce bun, you'll want to go light on dressings and condiments, because they can't absorb into the bun the way bread can.  It will slip right off and be messy.  What you can do instead, is opt for a base for your burger bun.

Leafy Bun Base Ingredients

Here are a few delicious base-foods that can be used for your leafy green buns:

  • Quinoa - soaks things up like rice and makes a tasty base for your leaf bun.  
  • Veggie Patties - If you put some vegan ketchup, vegenaise, or mustard on it, it won't slide off.  It will absorb into your plant-based meat.
  • Tofu Crumbles - Takes on the flavor of whatever you cook it with so go wild!
  • Portabella Mushrooms - Sometimes has a slippery texture but if you face the cup of it up, before adding the other half of the bun, then fill it with something (brown rice, oatmeal, etc.) then it will make the perfect slider base!

The Best Leafy Buns Out There

Leafy buns are so good and are a great way to get more veggies into your diet.  Let's face it, we can never have enough leafy greens!  Here are the best ones out there for you to try.
  • Butter Lettuce - This one would be considered a superfood with all the health bennies it has.  Vitamin K, Vitamin A, Vitamin C, and Vitamin B6, that's just to name a few.  It's high in fiber, meets your nutritional requirements, and is low in fat and cholesterol.  
  • Collard Green Leaves - Again, a nutritional powerhouse!  This lettuce has a bit of a bitter taste, but it tastes good as a leafy green bun or in juice recipes.  Comes rich in potassium, as well as all the vitamins and minerals listed under good ole butter lettuce.
  • Romaine Lettuce - This one is low in fiber so no bueno to that, but great on the mineral front and high in folate.
  • Spinach Leaves - I like to use spinach leaves, with their slightly plain and bitter taste, as a rollup a lot.  Like with cucumbers and hummus, it makes for a great lettuce wrap.  The great thing about spinach is that it's high in protein, low in fat!  So, it's a win-win for the green team.  
Leafy green buns are great for other meals too.  I once made taquitos with collard green and lime juice.  It was delicious!  Experiment a little and remember this counts towards your daily intake. 

It's also worth mentioning that lettuce buns are gluten-free, for those of us who have c.diff, colitis, or other stomach or digestive issues.  It's a fun way to get the whole family eating better at the dinner table!
