Edible Green Pepper Vegan Bowl With Salad Mix

The edible green pepper vegan bowl with salad mix is kind of fun to eat.  Why?  Because you can eat the bowl too!

I had a green pepper sitting in my fridge that I needed to find a use for and this is what I came up with. The spring salad mix is loaded with lots of desirable leafy greens.

You can buy it pre-washed from the grocery store in a bag or you can just as easily make your own.  You mainly just need lots of baby lettuce.  To mix salad, shake it up in a bag or mix with your hands.

Obviously, wash your hands first, but I figured that goes without saying.  You can even add the red wine vinegar and oil to your hands when mixing, so it barely tinges the leaves and doesn't come off as overdone or greasy.

This edible vegan bowl is also raw vegan.  Red wine vinegar and oil are considered raw vegan and everything, including the bowl, are all made from fresh organic veggies.  If you can grow them straight from the garden, you get bonus points!

It's also important to note, that this recipe is gluten-free, for those of us who have tummy troubles.  There's a lot of fibers in leafy greens and veggies, which is what this entire vegan recipe is made out of, so it will keep your digestive system healthy.

Nutrition Info

Chick Peas - are full of a large amount of both fiber and protein. They really pack a vegan punch! You'll often hear people laughingly say that vegans don't get enough protein, but plant-based foods got you covered.

Carrots - Everybody knows that carrots are the windows to your soul, or is that the eyes? Whatever. They go hand-in-hand for keeping clear vision and have a lot of natural based sugars in them. 

Black Olives - are known for being heart healthy.  They are a "healthy" monounsaturated fat, that reduces the risk of heart disease and stroke.  

Leafy Greens - are known for bone health, since they are often stocked with calcium, especially when it comes to cruciferous vegetables.  Spring mix often comes with baby leaves like spinach, romaine lettuce, and arugula.  It even comes in different colors like red.  Leafy greens are high in fiber and keep you regulated, have potassium, and vitamins A, C, and K.  They are also low in calories, which aids in weight loss!

Secret Ingredient:  Green Pepper!  I chose green pepper because you'll be eating a whole bowl if you finish your salad.  Read on to find out what's so dang great about bell peppers!

Green Pepper - Full of vitamin A, C, B6, and vitamin E.  Green peppers are known to make your skin, hair, and nails glowing and healthy, as they are plum-full of carotenoids.  Carotenoids are also known to prevent disease and cancers.  

Another carotenoid benefit:  Vision care!

Red Wine Vinegar and Oil - are known for their antioxidants which prevents free-radicals.  This helps reduce cell damage.  The oil is known for being a "healthy" fat that is good for heart prevention and stroke.  

Edible Green Pepper Vegan Bowl With Salad Mix

The edible green pepper vegan bowl is so delicious and fresh from the garden! What I love about this bowl, is that you can eat the bowl too.

  • 1 Whole Green Pepper
  • 1 handful or bunch Spring Salad Mix
  • 8-10 cut carrot sticks, cut small Carrots
  • 8-10 large Black Olives
  • 8-10 raw chick peas Chick Peas
  • Sprinkle as needed Pink Himalayan Salt
  • As needed Red Wine Vinegar
  • Just a Swirl of it Olive Oil

Cut the top off of whole green pepper and wash well.

Now, add spring salad mix to green pepper bowl. You can buy a pre-made bag from the grocery store or make your own with baby green romaine lettuce, baby red romaine lettuce, arugula, baby spinach, and radicchio. Shake and mix well. 

Cut up carrots and add to vegan bowl. Mix with hand.

Add whole black olives to the mix on top. Mix in if you like. 

Add peeled chick peas to the top of the bowl. Mix if desired.

Mix in as much red wine vinegar and oil as you like, making this salad heart healthy with "healthy" fats.
